Chicken and Sausage One-pot Stew
With Mak Tok’s Signature Chilli Paste
This one pot meal is so simple, but bursting with flavour and a little kick that makes it perfect for those cold winter nights when you want something hearty and comforting. Make enough for a couple of days, and it will taste just as good the last time as it did the first time!
1) Place the chicken, garlic and onion, once they are diced, into a pan and cook until brown. Mix oil in as you are cooking, rather than before hand. Sprinkle your salt, pepper, and paprika in.
2) Once browned, put on a medium-low heat and add in diced sausage, as well as parsley and some more oil.
3) After 10 minutes, or when sausage is browned, add chicken stock, signature chilli paste and petits pois, and leave to gently simmer for 35-45 minutes, stirring as appropriate.
4) Remove, and serve!
