Hainanese Chicken Rice
With Mak Tok’s Sweet Chilli Paste
1) Bring water to boil. Add chicken thighs and stock cube. Simmer the stock in low heat for 15 mins or until chicken is cooked. Remove chicken and set aside.
2) In a rice cooker, place the soaked rice and add the chicken stock, soy sauce, garlic, ginger, and sesame oil. Season with a pinch of salt and pepper. Cook the rice according to the settings available.
* Don’t have a rice cooker? Just use a saucepan. Cook under low to medium heat for 10-15 mins.
3) Fluff the rice before serving. Assemble cucumber, chicken thigh, and serve with Mak Tok’s Sweet Chilli Paste.
