Pumpkin Chilli Rice

With Mak Tok’s Signature Chilli Paste

Ingredients

  • Part A:
  • 3/4 to a full jar Mak Tok's Signature Chilli Paste
  • 3/4 tbsp Dark Soy Sauce
  • 3/4 tbsp Sesame Oil
  • 300 g Pork Belly (thinly sliced)
  • Pinch of White Pepper
  • Pinch of Chinese Five Spice Powder
  • Part B:
  • 2.5 cups Soaked Basmati Rice
  • 500 g Pumpkin (peeled and cubed)
  • 200 g Mushroom (any variety)
  • 300 g Carrot (grated)
  • 6 cloves Garlic
  • 40 g Ginger
  • 200 g Fried Shallots
  • 300 g Spring Onions
  • 400 ml Water
  • Optional:
  • 25 g Dried Shrimps

Method

1) Mix and marinade Part A for 30mins.

2) Lightly fry Part A for 2mins in a rice cooker with its lid open.

3) Add Part B and close the lid. Allow to cook for about 30mins.

4) SNAP A PICTURE and SHARE IT WITH US!

5) Dive in for the best meal after a long day.
