Sweet Potato Chilli Pancake
With Mak Tok’s Signature Chilli Paste
1) Boil sweet potato cubes for 10-15mins and drain the water.
2) Mash the cubes and let it cool for 5mins.
3) In a bowl, mix the flour, salt, beaten egg, chilli paste, and extra virgin olive oil before adding the mashed sweet potatoes. Mix well.
4) Heat up a pan and lightly oil it. Cook the pancake on medium heat (2mins on each side).
5) Enjoy with cream cheese chilli dip.
