Sweet & Sour Mango Chilli Sauce

This dish is a must have in my family during this time of the year and grandmama always made sure there is plenty to go around. For our vegan friends, try substituting the chicken pieces with extra firm tofu.

Ingredients
3 cloves garlic (minced)
1/2 red bell peppers (squared)
1/2 green bell peppers (squared)
1/2 mango (cubed)
4 boneless chicken thighs (diced)
1/4 teaspoon salt
1/8 teaspoon white pepper powder
1/8 teaspoon turmeric powder

1/2 bottle Mak Tok’s Mango Chilli Sauce
1 tablespoon cornstarch
Oil for deep frying
1/8 teaspoon salt

1/2 bottle of Mak Tok’s Mango Chilli Sauce for the finishing

Directions
Marinate the chicken thigh pieces with salt, white pepper powder, turmeric powder, Mak Tok’s Mango Chilli Sauce and cornstarch. Mix well and set aside for 5 minutes.
Heat up a wok and pour enough oil for deep frying. Deep fry the marinated chicken pieces for 7 minutes or until golden brown on medium heat. Remove the cooked chicken from the wok and set aside.
In the same wok, gently fry the garlic before adding in the red peppers, green peppers and mango pieces. Give it a good stir and toss for 1 minute. After that, add the cooked chicken pieces to the wok and stir well.
Finally, finish the dish with an extra pinch of salt and Mak Tok’s Mango Chilli Sauce for good luck (and flavour).
Served on its own or with warm rice.
