Bergedil, is Malay styled potato patty. This is an easy recipe to use up your spare potatoes and turn them into a scrumptious dish! Usually Bergedil’s are eaten alongside curries, but this is also a perfect side or appetizer for a dinner party with friends and family.
Skin the potatoes and cut them into cubes. Bring a pot of water to the boil and cook the potatoes until soft. Drain the water and set aside.
Add the potatoes into a bowl and mash them up. Add the salt and black pepper to taste. Now, add the coriander/parsley and red onion to the mashed potato and mix well.
Oil up a pan and turn the heat to medium. Scoop a good chunk of mashed potatoes mixture and roll it into a ball whilst gently applying pressure to flatten it into a patty.
Pan fry the patty until golden brown and serve with Mak Tok’s Sweet Chilli Paste.
Recipe Note
Top tip: Add an egg to prevent the patty from falling apart. If you are on a vegan diet, try soaking some chia seed with warm water for 15 minutes. The water used to soak the chia seed will act as the binder – similar to what an egg can offer.
